| Is E392 Extracts of rosemary safe?
Considered safe at the approved use levels, and reactions are rare. Contact allergy to rosemary and other plants of the mint family has been reported, mostly after cosmetic or occupational exposure, while reactions to the food additive are uncommon. Unlike the culinary herb, the additive is standardised on its antioxidant compounds rather than used for flavour.
| Uses
Slows rancidity and colour loss in vegetable oils, fried snacks, sauces and dressings, processed meat and fish, and ready meals. It is often chosen as a plant-derived alternative to synthetic antioxidants such as BHA (E320) and BHT (E321). Food-grade extracts are deodorised and decolourised so they do not add a rosemary flavour.
| Interactions
The antioxidant activity comes mainly from carnosic acid and carnosol, which trap free radicals in the fat phase. It is often combined with tocopherols (E306) or with ascorbyl palmitate (E304) and citric acid (E330) for a stronger and longer-lasting effect.
| Origin
Made from the leaves of Rosmarinus officinalis, extracted with solvents such as ethanol, acetone or supercritical carbon dioxide, then purified to remove most of the flavour and colour compounds.
| Daily Intake
EFSA established an ADI of 0.3 mg per kg of body weight per day, expressed as the sum of carnosol and carnosic acid. For a 70 kg adult that is about 21 mg per day.
