| Is E212 Potassium benzoate safe?

With ascorbic acid (E300) in acidic drinks, traces of benzene can form under heat or light, though manufacturers have largely reformulated. Reactions are reported in some people with asthma, urticaria or aspirin sensitivity. It also adds potassium, which matters for people on a potassium-restricted diet.

| Uses

Preserves soft drinks, fruit juices, sauces, dressings and margarine. It is very soluble in water and is chosen over sodium benzoate in reduced-sodium products. Like all benzoates it only works below about pH 4.5.

| Interactions

Releases benzoic acid in the product and shares its group ADI with E210, E211 and E213. Often paired with potassium sorbate (E202) so the pair covers moulds, yeasts and bacteria across a wider pH range.

| Origin

Synthetic. Made by neutralising benzoic acid with potassium hydroxide or potassium carbonate. Benzoic acid itself occurs naturally in cranberries, prunes and cinnamon.

| Daily Intake

EFSA's 2016 re-evaluation maintained a group ADI for benzoic acid and benzoates of 5 mg per kg of body weight per day, expressed as benzoic acid.
